When brewing tea normally with tea sets, it is generally acknowledged that three brews are the standard. In general, soluble matter in tea leaves can be released about 50% during the first brew, and around 30% during the second brew, and around 10% during the third brew.

When brewing tea with the usual teapot, it is generally recognized that three infusions are standard. In the first infusion, around 50% of the soluble substances in the tea leaves are released. The second infusion releases around 30%. The third infusion releases about 10%, and by the fourth infusion, almost none remains.

When brewing tea, the length of time you steep it has a direct impact on the tea's density and quality. It is not recommended to use a measuring cup for expensive tea leaves because water is too hot to drink in just a few minutes and will make the tea flavor thicker if left for too long.

Obviously different teas of freshness steeping time will definitely be different, time and frequency must control according to tea leaf's freshness.

Young Green Tea and Young Red Tea:

The infusion time is controlled at 3-5 minutes, with three infusions. The first infusion takes 10-15 seconds to pour the tea and drink two-thirds of it while reserving one-third. The second infusion extends the pouring time by about 5 seconds, and similarly reserve one-third of the tea. In this way, during the three infusions, the concentration of the tea can be maintained relatively uniform.

Oolong tea:

Steep for about 2 minutes and make 5-7 steepings. The first brew is about a minute, then extend by about 20 seconds each time.
