The Song Dynasty is regarded as the peak of ancient Chinese culture development, and "reducing warfare, promoting literature, joint rule between sovereigns and officials" made the social status of intellectuals reach unprecedented heights.

The Song Dynasty was considered the pinnacle of ancient Chinese cultural development, with the policy of "repression of martial arts and promotion of literature, the king and ministers jointly governing" greatly promoting the status of intellectuals. The tea culture of the Song Dynasty rose from "evaluation" to "entertainment", and had a profound impact on China's tea poetry, tea utensils, Zen tea as well as Japanese Matcha rituals, and can be called the pinnacle of Chinese tea culture.

Song Dynasty

Set against the backdrop of a bygone era, stories set in the Song Dynasty seem to have an extra special place in the hearts of audiences. The dynasty is truly a "white moonlight" cherished by many directors for its elegant and refined qualities.

Afternoon Tea

The tea culture flourished to a great extent during the Song dynasty. Among all activities, including flower arrangement, hanging paintings and burning incense, drinking tea was most used in daily life by the people of that time and held the highest aesthetic value among them.

The recent popular TV drama "Great Song Palace" is full of close-up shots of tea being poured, and today Qing Yin will bring us a detailed introduction to the tools used for pouring tea and the steps involved.

1. Tea set (cup and saucer) 2. Tea spoon (sugar and milk spoon) 3. Tea pot 4. Teabowl 5. Tea scoop

Teapot (pitcher) —- used for holding water and pouring water, in ancient times called "soup tip."

Tea scoop - for stirring and boiling tea water, has been modernized in recent years, was called "zhu fu shuai" in ancient times.

Teaspoon - scoop tea powder, adjust tea paste.

Tea box - for storing tea powder.

Teacup - a painting of tea paste, can be not used normally.

Tea bowl — used for tea infusion and tea leaves, in ancient times called "táo bǎo wén".

Tea cloth —— Clean tea utensils, keep the table dry, anciently called "Si Zhi Fang".

Tea Etiquette Lesson

II, Tea leaves ratio to water.

Tea quantity: 23 spoonfuls

Water temperature: 85-90°C

Different tea powders have slightly different water temperatures, such as Matcha powder at 85°C.

Black tea white tea red tea powdered Water temperature can be slightly high about 90°C

Tea water ratio: 1:80 (better taste)

1:50 (more foam)

Technique: keep arm still, shake wrist.

Draw an "N" or "W" shape with your wrist.

(Note: Your arm will be a bit sore at first, but as you slowly practice you'll find your skill.)

Song Dynasty tea etiquette teachings

Three, the specific operation steps are as follows:

Warm tea pot

First pour a small amount of hot water into the teapot to heat it up. Then rotate the teapot once, so that the edges are heated thoroughly and then pour boiling water from the kettle into the pot.

Steps for making tea:

2, Add loose-leaf tea or tea dust

Next, take about two to three scoops of the tea powder and pour it into a tea cup. (The tea powder has many types here, such as white tea powder, black tea powder, red tea powder and green tea powder.)

Matcha

Watering cream (or gel) application

Add a small amount of water for stirring the tea powder, don't let it overflow. Stir in one direction to make the powder finer and easier to froth.

Moisturizing cream

4, point out foam on soup

The second pouring pours approximately 2/5 of the water level. At this point, use the method mentioned earlier: left hand holds the teacup, right hand dangles elbow, arm elbow does not move, sways wrist to draw "N" or "W" type, flicks tea soup, points out soup flowers.

Points out the scum on the soup.

Veggie-filled stew

The third rinse, roughly half the water level. Again, a bit more aggressive this time, pointing out richer and denser lather, by now basically switching to human body wash mode.

Tea

Regulation of soup flowers (flavor profusion)

The fourth water injection, about 4/5 of the water level, adjust the brush speed according to the situation. If there is little soup blossom, you can speed up; if there are many small bubbles, slightly slower. Adjusting the soup blossom smoothness, this time the brushing time can be a bit longer, the longer it takes, the whiter and more viscous the soup blossoms.

Adjusting the soup flower.

Adjust the broth clarity (fineness and whiteness)

First, after the soup has thickened a bit, you can add water one last time to get about 7/10 full. When stirring and beating, it's best to reduce the force slightly, as this is mainly used for adjusting the smoothness and clarity of the sauce, just like "clearing off" the makeup, with the longer the better in terms of whiteness and richness, smoothness and fineness, and when you drink it the sauce feels even smoother.

Flower Soup Adjustment

Appreciate the tea soup

After dipping, you can enjoy the tea soup or drink it directly, or perform glazing to paint. (Note: The method of glazing here is the same as the one at the beginning.)

Chá tāng

The method of making tea by boiling it is a style that was very popular in the Song Dynasty. It reflects the pursuit of elegance and poetic taste among people at that time. As an aficionado of tea, you can also try to make your own, appreciate the flavor and experience what Cao Daan, a renowned gourmet, described as "the color of the soup is pure white; the tea leaves congeal but do not disperse; the entry is rich and full-bodied".

Days can go on busy as usual.

But one's heart will become more refined slowly.

Drinking tea as a habit.

Delicacy will become a habit of the day.
